Citrus and Fennel Salad

Winter months are often a time for soups and warming stews but I will forever be a salad girl. Always craving the freshness of crunchy salads all year round. I think winter salads are massively underrated and often overlooked. This citrus and fennel salad showcases some of natures best winter offerings, so vibrant it will put a step into the dullest of winter days.
Ingredients:
2 red grapefruits
2 oranges
3 clementines
2 limes
1 lemon
1 fennel
1 tbsp of fennel seeds
1/2 tbsp of salt
2 tbsp fo EVOO
1 tbsp of honey/ agave
tajin
smokey flaked salt
Method
Step 1: make dressing
Add 1 tbsp of fennel seeds to a pestle and mortar and slightly crush. Then add the zest of one orange, juice of half a lemon, 1 tsp of fine salt and a good glug of EVOO. Mix and then set to the side.
Step 2: slice fennel
Finely slice one fennel, including the stalks and add to a bowl. Dress in 1 tbsp of the orange dressing and set to the side.
Step 3: slice citrus
Using a serrated knife, *cut off all the peel and pith off the citrus fruit and slice.
*keep your peel and make a zero waste surface cleaner. You can do this by putting all the peel into a container/ jar and topping with distilled vinegar. Leave it for 2 weeks and then strain and dilute!
Step 4: plate up!
Layer your sliced citrus and fennel onto a plate and spoon over the rest of the dressing. Drizzle over 1 tbsp of honey / agave then top with a dusting of tajin and a scattering of flakey smoked salt.
